Inspiration

Eclairs are believed to have originated in Lyon, France, in the early 19th century. "Éclair" is French and means "lightning". While the exact inventor remains a topic of debate, it's widely accepted that eclairs evolved from profiteroles, another beloved French pastry. The transformation came with the introduction of choux pastry, a light and airy dough, which is the hallmark of the eclair. Eclairs quickly gained popularity in France and became a staple in pâtisseries across the country. By the late 19th century, they gained international recognition.
